More than 40 years ago, master baker Wilhelm Kanne recognized that bread is more than just a food - and that there are powers in bread that can be beneficial to our health. For example, the well-known doctor and chemist Friedrich Hoffmann (1660-1742) mainly used pumpernickel to produce his "Hoffmann's Drops". Other doctors also valued the effect of pumpernickel, the dark Westphalian wholemeal bread. Its easily digestible, digestive-regulating and at the same time highly nourishing properties were praised. Farmers used to make a drink from this bread, which was considered a health drink par excellence. It was prepared by pouring boiling water over a few slices of pumpernickel. The next day the farmers took this drink to the fields to quench their thirst.

Time is an essential factor in the production of our traditional natural sourdough, which is the basis of our
wholemeal rye breads.

the low rye factor in rye ensures a low insulin response, and the betaine it contains strengthens the heart.
